Leftover cheeses? This is for you.

Need comfort food because it’s cold outside? Check this ridiculously easy but delicious cheese pie….
Use a ready made puff pastry sheet in a circle shape. Spread fig jam or pickle (mango chutney works well) over the pastry. Chop up any leftover melty cheeses and pile up to about 2 inches high then cover the cheese with the pastry, cover in eggwash and bake for 25 minutes at 180C. Serve with a carafe of red wine and fresh crusty bread.
Of course, you could serve with a salad…..
