Watermelon rind preserve

Don’t throw me in the sea! You can make jam out of me!

You have to remove the pink from the skin and cut 450g of skin into cubes. You need the amount weight of sugar, 28g salt, 4 pints of water, a small lemon thinly sliced and 2tblsps preserved ginger.

Soak the rind in the salted water overnight, then rinse and drain a few times. Place skins in a pan and cover with water, boil for 15 minutes before adding the sugar and another litre of water.

Add the sliced lemon and ginger and boil for a few more minutes before ladling into clean jars and sealing.
